What you’ll need
Makes 2 small bowls
- ¼ cup Coin Khakhra, roughly crushed
- ½ cup chopped cucumber
- ½ cup chopped tomato
- 2 tbsp finely chopped onion, optional
- 1 tbsp chopped coriander
- 1 tsp lime juice
A cucumber-and-tomato salad finished with a handful of rough khakhra crumbs.

Makes 2 small bowls
Combine cucumber, tomato, coriander and onion if using. Cut the vegetables into small, even pieces.
Add lime juice and toss. Taste the salad with a piece of your chosen khakhra before adding any further seasoning.
Divide into bowls and scatter the crushed khakhra on top immediately before eating.
Rough crumbs give more crunch than a fine powder. Crush the coins gently in a bowl.
