What you’ll need

Makes 8 topped coins

  • 8 Coin Khakhra
  • ¼ cup cooked sweetcorn, cooled and drained
  • 2 tbsp finely chopped tomato
  • 2 tbsp finely chopped cucumber
  • 1 tsp lime juice
  • 1 tbsp chopped coriander
  • Salt to taste, optional
Diet note: No dairy added in this topping.

Make it this way

  1. Drain the vegetables

Let the corn cool fully. Drain it well and remove excess liquid from the chopped tomato.

  2. Mix the salsa

Combine corn, tomato, cucumber, lime juice and coriander. Taste before adding salt; the khakhra already brings seasoning.

  3. Spoon onto coins

Add a small spoonful to each coin just before serving. Offer extra salsa in a bowl alongside.

Keep the crunch

Keep the corn mixture chilled if you are preparing it before serving.
